Chef
Dez is local winery’s Resident Chef
Abbotsford residents David & Liz
Avery and their local winery "Lotus
Land Vineyards" in Abbotsford have wine cooking classes instructed by Chef Dez!
These
classes feature recipes that pair with/include their wines made from
organically grown grapes.
The
classes will be held at the Winery's Boutique at 28450 King Road, Abbotsford
(Abbotsford/Aldergrove border) and are on selected Thursday evenings from
6-9 PM. Registration and further details for these classes will be handled by
the Winery directly, but registration
is very limited so please contact them early!!

There currently no classes scheduled
due to the hectic schedule of getting the first Chef Dez Cookbook finished &
published. Chef Dez will appear at the winery for book signing sessions in the
Fall of 2006.

recipes: Spicy Coconut Mango Prawns, Pastry Wrapped Wild Mushroom
halibut, and Tomato & Sausage Clams (the sausage can be optional)!

Wine is not
just for drinking, and fruit is not just a lunchtime snack!
This
series focused on the following fantastic recipes: Cinnamon Roasted
Pork Tenderloin with Pinot Gris Applesauce, Filet of Beef with Mixed Berry
Demiglaze, and Marscapone Stuffed Poached Pears!

Wine & Red Meat
Classes
in this series focused on cooking red meat in three recipes with
their delicious Lotusland Merlot:
a
fantastic Greek Moussaka, classic Peppersteak
Madagascar, and a mouth watering Merlot-naisse Steak Sandwich!

Mushrooms and Wine
These
classes focused on pairing Merlot, Pinot Noir, and Pinot Gris with mushrooms
in three delicious recipes: Coq au Vin, Wild Mushroom Risotto, and Tomato
Mushroom Rosé.

Comfort
Food
These
classes focused on enjoying food that comforts your soul. Recipes for these
sessions consisted of: Mulled Wine, Chicken Provencal, Garlic Mashed
Potatoes, and Drunken Pig (pork butt and a whole lot of wine)!

Celebration
of Garlic
Love
that garlic! These
classes focused on pairing garlic with Pinot Gris, Gewurztraminer, and Pinot
Noir. Recipes for these sessions consisted of:
Garlic
Tarragon Cream Sauce, Steamed Mussels in Red Wine & Garlic, and Garlic
Gewurztraminer Fudge!

Romantic
dinner for two
In
preparation for Valentine's Day, we offered a class focused on preparing a 3
course gourmet romantic dinner for your Sweetheart! For this venue, I will
be prepared cajun pan-fried oysters with a sambal-sorano mayo, seafood
angel-hair pasta, and chocolate covered strawberries.
There's
no better way to spend an evening than sipping on great wine, eating delicious
food, having a lot of fun, and learning something too!
