Tuesday, January 31/12, 6:30pm - Ahoy Matey! Comfort Food from the Sea
Get in the Galley with Chef Dez as he demonstrates some of the most delicious seafood comfort recipes. Tonight we will make scrumptious Spicy Seaside Stew served with Soda Bread, Whitefish with a decadent Sundried Tomato Butter Sauce, and his tasty version of Clam Chowder which combines the best of New York red and Boston white clam chowders. Miss this class and you’ll have to walk the plank!

Wednesday, February 8/12, 6:30pm - Cooking for the Love of Your Life
Why go to a crowded restaurant on the 14th when you cook up a romantic meal at home instead? Chef Dez has some great ideas for you. Tonight he will prepare some romantic recipes that will be sure to ignite the passion. We will start off with Cajun Pan Fried Oysters served with Chipotle Mayo, Broiled Asparagus, Rack of Lamb with Blueberry Wine Reduction and Garlic Mashed Potatoes for the main course, and then Quinoa Chocolate Cake with Vanilla Bean Ice Cream for dessert! You will have them swooning!

Tuesday, February 28/12, 6:30pm - Rustic Italian Soups & Crusty Italian Bread – Back by Popular Demand!
Winter is not over yet, and everyone loves soup & bread. Chef Dez will show you how to create flavourful soups and crusty bread from scratch. Tonight we will make Oven Roasted Tomato Soup garnished homemade croutons, favourful Italian Minestrone, and show you how to make Crusty Italian Bread from scratch that requires no kneading! This bread is amazing and is as beautiful as ones you would pay $5 for at a specialty bakery… and because it requires no kneading, you won’t believe how easy this is! Soup and bread will never be the same in your home again!

Wednesday, March.14/12, 6:30pm - All About Stir-Fry!
Let’s get wokking with Chef Dez. Stir frys are a great meal time option because they are quick and usually chocked full of vegetables! Tonight Chef Dez will rekindle your passion for wok cooking with these incredible recipes: Classic Beef & Broccoli, mouthwatering Spicy ‘Peach & Heat’ Pork on rice, and a delicious Chicken Shanghai Chow Mein.

Thursday, March 29/12, 6:30pm - Super Fasta Pasta
Pasta is a very popular meal option, but who wants to make a sauce that has to simmer for hours? Chef Dez has some great, super fast pasta dishes to share with you tonight for your busy lifestyles. Tonight we will indulge in classic Italian Linguine Puttanesca, delicious Pesto Cream Sauce on pasta with grilled chicken, and Pasta Fresca d’Estate (Italian for Fresh Summer Pasta). If you love pasta, you need to be here!

Wednesday, April 11/12, 6:30pm - Comfort Food
Although winter is over everyone loves comfort food to make you feel all warm & cozy inside. Tonight Chef Dez will demonstrate the following comfort food recipes: War Udon Noodle Soup, Spanish Paella, and Mussels in Red Wine & Garlic and a Crustiest loaf of Italian Bread that you have ever made out of your home oven and requires no kneading!

Wednesday, April 25/12, 6:30pm - Louisiana Cajun & Creole Southern Cooking
Do you want to enjoy the flavours and aromas of this wonderful cuisine, then tonight you need to spend it with Chef Dez. This New Orleans inspired menu starts off with mouth-watering Chicken & Sausage Gumbo, followed by moist and flavourful Creole Halibut Pouches, and the secret to the best homemade classic Pralines served on vanilla bean ice cream for dessert.

Thursday, May 10/12, 6:30pm - Classic Rustic Italian Foods
Come join Chef Dez as he shares with you his passion for Italian cuisine with four of his favorite Italian recipes. We’ll start the evening off with authentic Shrimp Scampi and a chunk of bread. Mediterranean Stuffed Pork Loin will be the main course preceded by 2 more courses: Mediterranean Dressing on mixed greens, and Pear & Capicolli Antipasti – slices of fresh pear with mild capicolli drizzled with a gorgonzola cream sauce. This is a class you don’t want to miss!

Tuesday, May 29/12, 6:30pm - Just Bring a Salad
How many times have you been told “Just bring a salad” when attending a pot-luck dinner? You don’t want to bring the same old boring salad, you want to impress them, but don’t know where to turn. Chef Dez and Cooks’n Corks to the rescue! Tonight Dez will give you some great ideas by preparing the following amazing salad recipes: Fresh Mushroom Salad with Spicy Bacon Dressing, grilled South-Western Steak Salad with avocado dressing, and his famous Surf & Turf Caesar Salad with bacon, prawns, and homemade croutons! All are sure to impress everyone on the guest list!

Thursday, June 14/12, 6:30pm - Greek Family Food
The focus of tonight’s class is Greek favourites that the whole family will love… even the most discriminating kids! On the menu tonight is Baked Salt & Pepper Pita Chips served with Sundried Tomato Hummus, lemon drenched Greek Rubbed Chicken on Rice, and Greek Burgers with fresh homemade Tzatziki. Come to this class and your family will thank you!

Tuesday, June 26/12, 6:30pm – Kill it & Cook it: Shellfish
Fresh is always the best when it comes to seafood, but what is the best way to handle live shellfish? Tonight Chef Dez will work with live crabs, mussels and clams in three exciting recipes from his Volume 2 cookbook: Amazing Garlic Roasted Crab, Tomato & Sausage Clams, and the Easiest Mussels Recipe Ever. All served with a chunk of crusty bread for dipping. If you love shellfish, this is a class you don’t want to miss!
