St. Patrick’s Day
Wednesday March 17/10, 6:30-9pm - Today is St. Patrick’s Day and the perfect day to celebrate with Irish food! Come join Chef Dez in this salute to the Irish as we explore Irish cooking with a glass of Guinness beer and Dez’s twist on the following classic Irish recipes: incredible Dublin Coddle, mouth-watering Soda Bread, and classic Colcannon with a Guinness Cream Reduction.

Easy Rustic Soups & Crusty Italian Bread
Monday March 29/10, 6:30-9pm – Everyone loves soup & bread! Chef Dez will show you how easy it is to create flavourful soups and crusty bread from scratch. Tonight we will make Oven Roasted Tomato Soup garnished homemade croutons, flavourful Italian Minestrone, and show you how to make Crusty Italian Bread from scratch that requires no kneading! This bread is amazing and is as beautiful as ones you would pay $5 for at a specialty bakery… and because it requires no kneading, you won’t believe how easy this is! Soup and bread will never be the same in your home again!

Greek Food
Monday April 12/10, 6:30-9pm - Join Chef Dez in the Kitchen Therapy kitchen as he creates some simply delicious traditional Greek food…just like you get in the restaurants! Tonight’s menu includes, a Classic Greek Salad, Souvlaki, Most Delicious Lemon Roasted Potatoes, Tzatziki & Hummus served with fresh Pita for dipping! You will be making this menu at home for company next weekend!

Spring is Here! Salad Dressings from Scratch
Wednesday April 28/10, 6:30-9pm – If you have store bought salad dressings in your refrigerator right now, then you need to take this class. Making salad dressings from scratch is not only a way to reduce the number of preservatives in your diet, but a great way to create flavour in the kitchen – and Chef Dez will show you how easy it can be. Tonight we will explore the science of dressing making with a Quick Oil & Vinegar, a delicious Fat Free Coleslaw, a flavourful Mediterranean dressing, and Dez’s special Caesar Salad made with blackened chicken and homemade croutons!

Mardi Gras in May
Wednesday May 12/10, 6:30-9pm - Did you miss Mardi Gras this year? There is no need to wait until 2011 for this Fat Tuesday celebration when you have Kitchen Therapy and Chef Dez! Chef Dez will take you through his versions of favourite Mardi Gras dishes. Find out what a true gumbo is with Hop n’ Shrimp Gumbo to start off this celebration. Mouth watering garlic buttered Cajun Chicken with Louisiana Red Beans & Rice for your main course and Sweet Biscuits with Rum Flambéed Bananas for dessert.

Classic Rustic Italian Foods
Monday May 31/10, 6:30-9pm - Come join Chef Dez as he shares with you his passion for Italian cuisine with three of his favourite Italian recipes: Mediterranean Stuffed Pork Loin, Mediterranean Dressing on mixed greens, and Pear & Capicollo Antipasti – slices of fresh pear with mild capicollo drizzled with a gorgonzola cream sauce. This is a class you don’t want to miss!

Greek Food – Part 2
Monday June 14/10, 6:30-9pm - The previous Greek class with Chef Dez was such a hit, that he’s back to teach you more! This class is meant to bring your Greek dinner to new heights, but the previous class is not a prerequisite. Tonight we will make rich, mouth-watering Moussaka (eggplant lasagne), fresh Pita Bread from scratch, and a delicious traditional Greek Halvah Cake for dessert! Register early – this class will sell out!

Kill it & Cook it: Shellfish
Monday June 28/10, 6:30-9pm - Fresh is always the best when it comes to seafood, but what is the best way to handle live shellfish? Tonight Chef Dez will work with live crabs, mussels and clams in three exciting recipes from his new book: Amazing Garlic Roasted Crab, Tomato & Sausage Clams, and the Easiest Mussels Recipe Ever. All served with a chunk of crusty bread for dipping. If you love shellfish, this is a class you don’t want to miss!

Pub Food Kicked up a Notch
Monday July 5/10, 6:30-9pm - Pubs are very popular and the food is enjoyed by many. Chef Dez will teach you how to make some great Pub food at home with three incredible recipes. We will start the class with tender Merlot Sauced Steak Sandwiches that are to die for! This will be followed by the most flavourful Mozzarella Stuffed Hamburger you have ever eaten, and an Irish Pub classic: Guinness Shepherd’s Pie. Soon you will be singing “…where everybody knows your name”

Cook with Blueberries!
Wednesday August 04/10, 6:30-9pm - Blueberries are not only for dessert, but for the whole meal. Chef Dez will bring this wonderfully healthy berry to the table in 3 great recipes and show you how easy it can be! Tonight we will make complex tasting Blueberry Cobb Salad, his famous Grilled Blueberry Brie Chicken Sandwiches, and a Blueberry Bread Pudding recipe for dessert that you don’t want to miss.

A Night with Splenda & Chef Dez
Monday August 30/10, 6:30-9pm - Chef Dez is one of the Corporate Chefs for Splenda Canada and whether you are diabetic or just want to cut some calories, this class is for you! Fiery Asian Grilled Pork Chops are marinated in Splenda, chillies, and tons of garlic, then grilled and glazed with a marinade reduction. Spicy Fennel Nuts as an easy snack can be stored for months in an airtight container. The perfect quick and healthy breakfast on the run: Oatmeal Breakfast Bars, and then we will finish off the class with a sweet treat: Fat-Free Cheesecake Bites.
