KILL IT & COOK IT: SHELLFISH. Fresh
is always the best when it comes to seafood, but what
is the best way to handle live shellfish? Tonight Chef
Dez will show you how to kill and roast live crabs,
pan sear scallops and then serve with a brown butter
sauce, and also work with live mussels and clams. This
class is a combination of 'hands on' instruction and
demonstration by Chef Dez. If you love shellfish, this
is a class you don't want to miss!

TOMATO PASTA SAUCES FROM SCRATCH. If you
like a more 'hand on' approach for a cooking class,
then this one is for you! Chef Dez will guide you through
making your own individual recipes of a full flavoured
tomato sauce, a rich tomato rosé sauce, and quick
and the classic Italian dish 'Linguine Puttanesca'.
From cooking the perfect pasta to creating complexity
in sauces, you will need to bring containers and a cooler
to take home your creations.

SALAD DRESSINGS FROM SCRATCH. If you have
store bought salad dressings in your refrigerator right
now, then you need to take this class. Making salad
dressings from scratch is not only a way to reduce the
number of preservatives in your diet, but a great way
to create flavour in the kitchen - and Chef Dez will
show you how easy it can be. Tonight we will explore
the science of dressing making with a Quick Oil &
Vinegar, a delicious Fat Free Coleslaw, a flavouful
Mediterranean dressing, and Dez's special Caesar Salad
made with prawns, bacon and homemade croutons! This
class is a combination of demonstration and hands-on.
